Chicken Spiedini

Serves 4

Grilled marinated chicken with Italian breading, rolled tight, skewered, and finished with a lemon garlic drizzle. A CarMico's classic.

Prepare the Chicken

  1. Place the chicken tenders in a bowl, add 2 tablespoons of oil, salt, and pepper, and toss until each side is coated with oil.
  2. Add the remaining ingredients and toss until well combined.
  3. Preheat the grill while you roll & skewer the chicken.
  4. Starting with the skinny end of each tender, roll it tightly, then skewer to keep the tight roll in place. Continue until all the chicken is rolled & skewered.
  5. Place the skewers on the hot grill and turn about every four minutes until each side is golden brown.
  6. Pull the chicken off the grill into a clean shallow pan and pour the sauce over the top — it should be well coated with the lemon garlic sauce.
  7. Cut into 2-inch pieces and serve. Usually 3–4 pieces per person.

Make the Sauce

  1. Add all the ingredients to the bowl of a food processor except for the oil.
  2. Pulse the ingredients until nicely chopped.
  3. With the food processor running, slowly pour the oils in.
  4. Taste for seasoning. Serve with pasta.
